These coffee beans are collected manually. After harvesting, they are taken to the processing plant, where they are floated to remove grains that do not meet the necessary characteristics for proper fermentation. Following this, the beans are placed in baskets for 24 hours without pulping the skin. The beans then undergo double fermentation: 24 hours with oxygen present (aerobic) and 192 hours without oxygen (anaerobic). Finally, the beans are dried under a canopy for approximately 15 to 19 days.

These coffee beans were collected manually and after harvesting they are taken to the processing plant. There, they are floated in water to select the grain that does not meet the necessary characteristics for correct fermentation. After that the beans are put in baskets for 24 hours. The next day the coffee is depulped and stored in containers for 144 hours with the presence of oxygen. After this process, the coffee is washed twice and taken to the canopies to dry in the sun at an average temperature of 93.2 degrees Fahrenheit for approximately 13 to 16 days.
